The Derthona is made from the Timorasso grape, a rare and ancient indigenous Piedmontese variety, which has been saved from extinction by the gregarious and outspoken winemaker Walter Massa, who recognised Timorasso’s affinity with his terroir.

Timorasso produces tiny yields of immensely concentrated fruit and, in the past, was overlooked in favour of high-volume producing varieties, until Walter took over his family’s farm on the steep hills east of Tortona, and produced 500 bottles from a tiny 5-hectare plot. His holding has now risen to 20 hectares (very little is grown elsewhere), and so this is a great opportunity to taste a wonderfully unique full-bodied white wine style with good acidity that shows plenty of fruit character and a mineral backbone. Enjoy with charcuterie, fish, seafood risotto and Asian dishes.

As befits someone who refuses to accept the vagaries of fashion, tasting with him is an experience: his assistant apparently never wears shoes, and the higgledy-piggledy winery would give a health-and-safety officer nightmares. Yet, out of seeming chaos comes exquisite wine: tasting through the range makes it easy to see why the grape excites. In youth it reminds me of viognier, but with structure of great riesling; as it develops I think of Loire chenin or Hunter Valley semillon.
