Penfolds Bin 707 Cabernet Sauvignon 1997 is a wonderful Australian Bordeaux-inspired red from the Barossa Valley, and was named after the 707 Jumbo Jet by an ex-Qantas marketing man.

Penfolds wine estate was founded by an English doctor, who migrated to South Australia in the mid-19th Century. Penfold had a firm belief in the medicinal value of port and sherry and began making fortified wine for his parents. Penfold's ethos continued until the 1950s when Jeffrey Penfold tasked winemaker Max Schubert to cater for changing consumer tastes. Almost single-handedly Schubert lifted Australia's wine industry out of mediocrity, and today Peter Gago is the esteemed winemaker in charge in the Barossa Valley.
