Estate Notes

Penfold's Bin 707 Cabernet Sauvignon is a wonderful Australian Bordeaux-inspired red from the Barossa Valley, and was named after the 707 Jumbo Jet by an ex-Qantas marketing man.

Penfolds wine estate was founded by an English doctor (Dr Christopher Rawson Penfold), who migrated to South Australia in the mid-19th Century. Penfold had a firm belief in the medicinal value of port and sherry and began making fortified wine for his parents.

Penfold's ethos continued until the 1950s when Jeffrey Penfold tasked winemaker Max Schubert to cater for changing consumer tastes.

Almost single-handedly Schubert (who died in 1994) lifted Australia's wine industry out of mediocrity, and today Peter Gago is the esteemed winemaker in charge in the Barossa Valley.

“Opaque ruby. Intensely perfumed aromas of dark berry preserves, cherry pit, licorice and mocha, with a suave floral overtone. Sappy cherry-vanilla and cassis flavors reach every corner of the palate and become spicier and sweeter with air. Finishes smooth and long, with resonating spiciness and a persistent note of candied cherry.” Stephen Tanzer, International Wine Cellar

“This deeply coloured, full-bodied Cabernet has an array of blackcurrant and redcurrant fruit drawn from the best cabernet vineyards of Penfolds (and from some growers). The oak and tannins add another dimension, and the wine will still be improving 20 years hence.” James Halliday
