Estate Notes

Il Etait Une Fois (‘Once upon a time’) is a magnificent expression of a great southern Rhône terroir, fully comparable to the best-known appellations but with the extra freshness of Ventoux.

Sébastien Vincenti and Nanou Barthélemy’s Domaine de Fondrèche is widely recognised as one of the very best producers in the Ventoux appellation. What is more, their wines remain exceptional value, despite the ever increasing fame and demand.

Winemaker Sebastien Vincenti loves his terroir and believes that his vines are stronger when treated naturally, including 100% organic manure, no chemical herbicides, and complimentary planting between rows to prevent erosion, promote microbial life and aerate the soil.

"The flagship wine is the 2015 Cote du Ventoux Il Était Une Fois and this cuvee is always Grenache – dominated, with small amounts of Syrah and Mourvèdre. Destemmed and aged in foudre, it’s a fresh, elegant example from this vintage that gives up notes of raspberry, black raspberries (even a hint of fresh plum) to go with lots of floral characteristics, medium to full-bodied richness and ripe, polished tannin."
