Domaine Fourrey's Chablis 1 er Cru, Vaillons 2015 yields from vines grown on two parcels of premier cru vineyards comprising just two hectares. It is elegant, fruity and concentrated, with wonderfully defined steely minerality.

Jean-Luc Fourrey and his sister Marie are the fourth generation and driving force behind this exciting, emerging producer, marrying traditional and modern techniques on the quality stony slopes of the Côte de Lechet. It is no surprise that in just over a decade Fourrey has emerged as one of the best producers in Chablis. An exciting, up-and-coming venture – and an estate to watch.

"I'm on record as saying that, at it's best, Chablis is the world's greatest expressions of the Chardonnay grape. This, from a top vintage and one of the best premier cru sites, is eloquent testament to that. Subtle, wet river stone minerality, taut apple notes and fleeting glimpses of summer meadows on the nose lead on to a firm and finely-etched, steely palate. There is fruit, and there is textural weight, but this is the antithesis of the 'golden' Chardonnay style: linear, lightly salty and strictly defined, it has a lemon-juice freshness disguising its concentration, its depth and complexity revealed slowly as the bottle goes down." Elegant buttery dessert apple and quince aromas, with floral high notes and savoury mineral base. Fine balance and concentration, showing well focused fruit on the fruit palate, lovely depth and freshness on the centre, and long aromatic development and intensity in the finish. Finesse.
