Domaine de Fondrèche's 2020 Persia Blanc is the quintessential southern Rhône white, and the estate's premium white wine. It exudes class, with great complexity gained from aging on its lees in large wooden casks for six months.
Sébastien Vincenti and Nanou Barthélemy's Domaine de Fondrèche is widely recognised as one of the very best producers in the Ventoux appellation. What is more, their fine red and white wines remain exceptional value, despite the ever increasing fame and demand.
Winemaker Sebastien Vincenti loves his terroir and believes that his vines are stronger when treated naturally, including 100% organic manure, no chemical herbicides, and complimentary planting between rows to prevent erosion, promote microbial life and aerate the soil.
Aromatically closed after bottling, but showing markedly smoky mineral depth with notes of apricot, fig, pear eau de vie and herbs. The palate is fat and expansive, gentle on the front, closed and concentrated in the centre with fresh mineral depth, good salinity, then a long creamy and lightly macerated development, and long persistence in the finish. Great with asparagus and smoked bacon, grilled lobster and pan-fried sweetbreads.
