Domaine de Fondrèche's Il Etait Une Fois Rouge 2018 is a magnificent, full-bodied, expression of a great southern Rhône terroir, largely produced from old Grenache vines planted in 1936, and aged for a year in large wooden casks - fully comparable to the best-known appellations but with the extra freshness of Ventoux.
Sébastien Vincenti and Nanou Barthélemy's Domaine de Fondrèche is widely recognised as one of the very best producers in the Ventoux appellation. What is more, their fine red and white wines remain exceptional value, despite the ever increasing fame and demand.
Winemaker Sebastien Vincenti loves his terroir and believes that his vines are stronger when treated naturally, including 100% organic manure, no chemical herbicides, and complimentary planting between rows to prevent erosion, promote microbial life and aerate the soil.
"The 2018 Ventoux Il Etait Une Fois is the top Grenache in the lineup (there are small amounts of barrel-aged Syrah, Carignan, and Mourvèdre) and it's brought up mostly in foudre. This is another incredible looking barrel sample from this team that sports a deep purple color, notes of black raspberries, ground pepper, incense, and spice, medium to full body, terrific purity of fruit, and a layered, balanced, concentrated profile. Intensely concentrated red fruits, spice, kirsch and mocha, with notes of cypress, savoury, and lavender, plus fine mineral depth. Lovely velvety richness on the palate; opulent without heaviness, having fine balance and focused fruit, the structure dense but perfectly melded with a fresh mineral base, then a long succulent development, macerated but lifted, and very long spice on the finish.
